The second option is to renounce your vassalage to your king. This means losing all of your fiefs and a -20 reputation penalty with the king. After that, you need to take a castle or a town on your own to form a new kingdom. You cannot siege a castle or a town without having negative reputation with the faction.

I stopped forming the kingdom. I found you can take over towns and castles without it. Find a spot you can take, wait for the right moment. seige the town and take it, when the enemy army comes pay for peace. rinse, repeat. I have like 5 major towns, and 7 castles. and since you are not a kingdom yet, they cant delcare war on you.

Mercenary companies get paid 500-600 gold per influence. So if they are all winning battles you have to pay money for that. Or maybe you might decide you want to change the look of your companions, even buying all fresh t5 gear for 7 companions could run you over a million.

If you're set on being independent and forging your own kingdom the hard way, I'd suggest a very strong party of at least 200 men, and a decent roster of companion parties before attempting it. You can probably score a city and a castle before then, but keeping them will be the issue. #13.

I almost always take Nevyansk first bc it's always low on troops but that area is ALWAYS infested with looters. I would take Oristocoris castle, it is easily defensible as it only has one way in or out. Both villages are close by. Easier from there to mount attacks to the Western Empire, Vlandia and Aserai.
Join friendly army groups that are starving, get a ton of food and keep following, you'll get constant +1 influence while together with said army. Vote for policies in your kingdom that give you influence bonusses. (if they work) Keep fighting lords for at least 5ish influence at the time.
